What happens at the school, i.e. how much track time is there, how much classroom, etc?
A typical school is usually split three ways: classroom, exercises, track time.
There are classroom sessions throughout the day where theory, safety issues, techniques, and various sundry announcements are discussed. Skid pad and on-track exercises have drivers practicing emergency maneuvers and techniques. Then there are the track time sessions where the driver is asked to apply the theory and technique of enhanced driving on track while navigating the corners of the track.
During exercises, there is often an instructor supervising, and sometimes there is one in-car. Always during track sessions, there is an instructor in the car, in the passenger seat, guiding the driver verbally and with hand-signals (unless, of course, the experienced advanced driver is permitted by their instructor to drive alone).
Each school is different but generally each of these three activities takes up one-third of the day. That said, novice drivers typically have more classroom time; the "top-guns" have more track time.
